GRILLED VEGGIE SALAD
1 tsp. fresh rosemary
Fresh cracked black pepper (to taste)
21/2 tsp. olive oil or canola oil
1 tsp. balsamic vinegar
1 clove of garlic, minced
1 C. fresh corn (cooked and cubed)
1 small zucchini, cut into thin strips
1 small yellow squash, cut into thin strips
1 large red bell pepper sliced
1 medium eggplant cut into disks (remove skin and season with sea salt and pepper)
1/4 C. sliced red onion
1 large tomato sliced
Fresh Spinach
Feta Cheese

Be creative with this add the veggies you love, use what is in season, locally grown and go for organic when possible. |
2. Place all veggies (except spinach) in grill pan and cook for 3-5 minutes.
3. Place all cooked veggies on top of spinach, sprinkle with feta and you are good to go!
